Default Hong Kong Version?

I'm planning to pick up a Ceramic White Giga Pack (yay!) when Im in hong kong at the end of year. I don't think it'll be out in Aus by then since the PSP itself has only been out here for one month.

Any buying tips?
And will it be the Japanese version or is there an actual "Hong Kong" version?
Will I be able to change the language to English?

Thanks.
