How much music and movies can a 512 mb memory stick hold?

This is covered in a previous thread too... but it all depends on the size of the files obviously.

One can sample at a lower rate therefore reducing the size of the files and making it possible to store more files in the memory stick.

Why not check out the average size of a MP3 file on your machine and you can then estimate how many music files one could get on it.... now as for video... depending on the size of the file... that thread I mentioned earlier... I believe one of the chaps actually broke down how big the average 30 min programme could compress to so please hunt down that thread as it will answer all of your questions.
