My friend attended Jump Festa day one had a chance to play the Crisis Core demo (one of the few things he had time to do), so here is some first hand information. He only got one chance to play it, and it was a bit rushed and limited, so it's a tad vague.
The 8 Materia Slots in the bottom right are for your various commands. The first is "Fight", the last is "Item". In the demo, the rest of the slots are occupied by various types of magic, though it's assumed that you will be able to customize it with a variety of abilities in the real game.
Square is dodge, and causes Zack to perform a somersault, similair to the Dodge Roll in KH. Triangle is block, and appears to require timed input to be used succesfully. Attacks can be used in combinations, though my friend was only able to pull off 2-hit combos (he wasn't paying attention to the AP, he said).
The Slots roll, but he wasn't paying enough attention to say if they stop and start on their own, or if it's timed with your attacks. They also weren't explained at all, so they are still a bit confusing.
When slots line up, you get a message and, and in his case, was able to perform the Meteorain Limit Break. He didn't get any of the so-called Recollection Scenes, so they are probably in fact only seen during boss battles, though it's possible that they only actually happen from time to time.
English text flashes on the screen when you start or finish battles, though he only remembers the end of the first battle, "CONFLICT RESOLVED." When you win a boss fight, Zack does his classic victory pose, which Cloud nabbed from him, and a remix of the classic fanfare plays.
His memory on the cutscenes is a bit hazy, though if he has another chance to play, he'll have a better idea of what's going on.
In the Wutai mission, it starts with the cutscene of Angeal and Zack talking. Angeal mentions Razard. Near the start, Zack leaps over a wall and you get some time to control him and do a few fights. You finally get to the entrance, which is heavily guarded, and you procede to fight all 14-15 of them at once. There are also four guards up on the walls, which you must use magic to take out. When you get inside, you fight two bosses and defeat them. A third comes down with a huge hammer, and fights Zack, as seen in the trailer. The scenario ends with Zack doing the aerial somersault slash.
At the start of the Ifrit scenario, a "tech guy" with glasses and light hair, possibly Razard (he's unsure) gives you a mission briefing. It appears that Genesis has already gone renegade at this point, and Tseng seems to think Angeal might have some information on him. They go to his hometown, and Tseng finds a freshly dug grave. Tseng stays behind to investigate it, and sends Zack ahead to Angeal's.
When Zack nears the center of town, there is a cutscene in which he finds himself in a hellish volcanic-area, and Ifrit is there. Zack says something like, "Ifrit!? A summoned beast? Who the hell summoned him?" and you have a boss battle. He was able to beat him using Blizzara repeatedly and exploiting the fact that you have 99 Ethers in the demo.
He was able to complete both scenarios and then start the Ifrit one again within ten minutes, so it seems that the game will be well-suited to pick up and play on the go.
The wait line for the demo was roughly an hour long, twice as long as the waits for It's a Wonderful World or Kingdom Hearts II: Final Mix+, though this may be due to the fact that the CC-FFVII- demo was a full ten minutes long.
As someone who wasn't the biggest FFVII fan and wasn't too thrilled about the Compilation, after playing the demo, he said he "wants it so badly now", and that "all regrets about impulsively buying a PSP have gone zooming down the drain." So, shining review from a less-than-FFVII-fan. Good news. :nod
